Jacqui Thompson has spent more than a decade building direct relationships with the farmers and distillers behind Mexico’s agave spirits, first as co-founder of Revel Spirits, working hands-on with producers in the Morelos region, and now as co-founder of Las Melodías de la Luna Mezcal, partnered with master distiller Rosario Ángeles in Santa Catarina Minas, Oaxaca.
Oaxaca Immersions grew out of that relationship, turning years spent learning the region and its producers into trips built for guests who want the same access.

Mezcal is a distilled spirit made from agave, native to Oaxaca and other regions of Mexico. It’s the original agave spirit, the traditional method all others (including tequila) descend from, made from many different agave varieties and traditionally roasted underground, giving it a distinct smoky character. No two batches taste exactly alike.
A Palenque is a traditional mezcal distillery, often family-run, where agave is roasted, crushed, fermented, and distilled by hand using centuries-old methods. It’s the heart of every trip we plan.

We run trips primarily September through May, avoiding Oaxaca’s rainy summer season. December and the Day of the Dead season (late October into early November) are especially popular, so it’s worth booking those windows early.

Rosario came to mezcal without a family tradition behind her. She learned the craft from the community of mezcaleros in Santa Catarina Minas, then built a palenque of her own in 2019, distilling her first batch the following spring.
Every bottle is made the ancestral way: agave roasted underground in an earthen pit, crushed by hand with a wooden mallet, fermented in open wood vats, and distilled in clay pots she tends herself. It’s a process that hasn’t changed in generations, and the result is award-winning mezcal that’s earned her a reputation as one of the finest producers in the region.
